Last night we put an extra blanket on the bed.  And we had the heater on at the breakfast table.  You know what that means?  It's time for soup! Cauliflower Soup





Here is what we had for lunch today. I like to go to the market on Saturdays before dawn and shop for the whole week as the sun comes up. Then I like to have a big breakfast at home. Maybe bagels, maybe a fry up, maybe a breakfast pizza.... and lots of cups of tea and coffee.  Then I mess about and do a few jobs.  Then I put some soup on.  This week it's Cream of Cauliflower soup.  We had it with a sprinkle of paprika and some Garlic and Cheese bread thrown in for good measure.  Probably that is uncouth.  But I like to throw bread into my soup. I do.  Do  you?  Or am I freaking you out?

Messy Recipe from last time : Minestrone Con Bruschetta

This very delicious recipe is taken from Stefano de Pieri's 'Modern Italian Food'.  Ari had two bowls and commented that it was 'So good and vegetables don't taste like anything, do they?'  Do not ask me why it is called Minestrone con Bruschetta. I do not know. (But if YOU do then DO tell us.)

Also, as an aside, Stefano says to cook little pasta shapes or beans separately and add them in at the end for best results, if you like those in there. In my experience this sounds good as it will keep your soup from being too cloudy and starchy. Enjoy soup. Soup is ace.

Extremely Good Gazpacho

1 kilo of tomatoes - chopped roughly
1 small red pepper
2 slices of nice bread
2 small cucumbers
2 cloves of garlic
2 cup of water
1/2 cup of extra virgin olive oil
1/2 cup of sherry vinegar
1/2 tsp of smoked paprika
2 tsp of salt
freshly ground black pepper

Process the tomatoes, red pepper, bread, garlic and cucumber until well pureed.
Place in a big bowl or bucket or vessel of your liking.
Add the rest of the stuff.
Let it sit in the fridge and chill until very cold and nicely gazpached.
Pour into tiny tea cups or shot glasses.
You can add vodka if you are naughty.

Cream of Cauliflower Soup Deluxe

1 tbsp butter
1 brown onion, diced
1 clove of garlic, diced
1 medium cauliflower, trimmed of it's leaves and cut into florettes
1/2 tbsp curry powder
2 cups of chicken stock
1 cup of water
1 cup of cream
black pepper
a pinch of salt

Heat butter and saute the onion and the garlic until soft and smelling good. Add curry powder, stock, water and cauliflower. Put the lid on and cook over a low heat for half an hour. The cauliflower should be tender by this stage. If it is soft, blend in batches and return to the pot. Stir in the cream and simmer until nice and hot - but not boiling! Season with salt and pepper and enjoy!

Corn and Bacon and Potato Soup... Chowder if you like!

My mum used to make this when we were growing up. This is my version, because I don't have her recipe. It's super yum and I recommend making a double quantity and freezing half for delicious suppers at a later date.

Oh... and you can definitely substitute FRESH corn for the corn kernels - but don't leave out the creamed corn - it makes it thick and sweet and super delish!




1/2 kg of peeled diced waxy potatoes
1 tin of creamed corn
1 tin of corn kernels
200 g bacon diced
1 onion
1 litre of milk
250ml chicken stock
salt and pepper
butter

Fry the onion and bacon in a wee bit of butter until lovely and smelling sweet. Add the corn, creamed corn, potatoes, milk and stock. Season with salt and pepper. Simmer for 25 minutes until the potatoes are tender. Eat it all up.

Cosiest Cream of Mushroom Soup



Oh. It's so cool in Melbourne today. I want to make some of this now! You know - if you reduce this down a bit - it makes a delicious toast topping. Just add a heap of cracked black pepper and a very huge cup of tea. Perfect.

500g diced mushrooms
6 golden shallots diced finely - or use one medium onion
1 clove of garlic, chopped
1 handful of fresh herbs - sage is nice - chopped
400ml cream1/2 cup plain flour
600ml stock - beef, vegie or chicken
salt and pepper
30 g butter
juice of one lemon


Saute the shallots and garlic until nearly golden, add the mushrooms and saute for about 15 minutes, stirring regularly until softened and sweet smelling and well combined. Squeeze in the lemon juice. Add the flour and combine well, then add the stock and fresh herbs. Allow to simmer on a gentle heat for 15 minutes, stirring often - it should thicken up a little. Then add the cream and cook gently for another five minutes. Serve with heaps of black pepper and sea salt and more herbs if you like! And bread, heaps of crusty bread!

Serves two hungry or four entree peeps!

Easy Enough For Duffers - Red Lentil and Vegetable Soup



I am one of those people who cannot get enough of SOUP. I just think you can't beat a warm bowl of deliciousness... especially on a wintery day. Soup makes me feel nurtured, loved and generally looked after. Even if I make it for myself, I feel totally chuffed and lucky. So if YOU made me soup...... WELL.... you should start running, because my gratitude would be a little TOO much to deal with for most people. And, did I mention I'm a good hugger?



1 tbsp mild curry paste
440g can of diced tomatoes
5 cups of chicken stock (or vegetable if you prefer)
1 carrot, diced
1 stalk of celery diced
1 small zucchini diced
1 potato diced
1/2 cup peas - frozen is fine
1/2 cup corn - as above
1 cup red lentils
a handful of chopped fresh coriander
salt and pepper


Fry curry paste in a little oil until fragrant.
Add tomatoes, carrot, celery, potato and zucchini.
Fry for a few minutes until nicely coated and softened a bit. Add stock.
Add lentils. Bring up to the boil.
Then simmer for ten to fifteen minutes over a low heat.
Add peas and corn.
Simmer a further 5 minutes.
Serve with plenty of s&p and the fresh coriander.

Soup for Pretty, Smart People

Soup Paysanne a la Francine

You will need:
50g unsmoked streaky bacon (diced)
2 small leeks (whites only, finely chopped)
1 medium onion, peeled & finely chopped
1 clove garlic, peeled & finely diced
200g potatoes, peeled & cubed
3tbsp olive oil
200g tinned peeled tomatoes
2 tbsp tomato paste
a few leaves of fresh basil
1 tsp sugar
salt and pepper
1.5 litres of water
herb of your choice for garnish


Heat the oil and fry (in a big pot) the bacon, onion, garlic, leek and potatoes over gentle heat for 5 minutes, stirring frequently.

Next, chop the tomatoes roughly and add to the pan with tomato paste, basil, sugar and salt & pepper. Cover and simmer for 10 minutes.

Give the potatoes a bit more of a mash in the pan.. then add the water, cover and simmer for half and hour.

Check seasoning and serve with a nice herby garnish!

Gobble it up!
